Ham and Beans

 It is a rainy cold day.  I always love Ham and Beans.  I was going to post some brownies or salad.  But it seemed like a great day for Ham and Beans.  


1 Lb    small white beans  (Soaked over night, cover with water).
6-8 c. water                              2 pieces of bacon cut and fried
1 large onion                            4-6 garlic cloves
¼ c. brown sugar                    4 T. Chicken Bouillon
¼ t. cayenne                            3 Bay leafs
Pepper                                    ¼ t. soda
1 c. diced Potato                     1 Ham bone  and pieces of Ham

Put all the above in a Crock Pot and coot till the beans are done.  You can also cook on the top of the stove on med. low till done.                                         
Optional to add:
Carrots, celery, worchestershire sauce, soy sauce, green pepper, chicken, Sausage.

Chicken Dumpling Soup

I love collecting recipes from wonderful people that have come in to my life.  When we lived in Ephriam, Utah.  We lived next door to Nellie Dokes.  She was like my grandma and helped me with my children.  She was danish and lived by herself.   (The whole town of Ephriam was Danish)  We live on Main street in the 3rd wifes house.  Next door was Nellie, she lived in the second wife's house.  It was a lot of fun living here.  These homes where old polygamist homes.  Loved it!   Nellie taught me how to make her Danish Dumplings.  They are to die for.  Along with her Chicken Dumpling Soup.  Since it is a cold day, I thought this would be a great recipe!!!  Sounds like a lot of work  but it is not to bad.  It is well worth it!!!




Chicken Dumpling Soup


Chicken cut up and covered with water
Add:
 1/2 t. pepercorn                 1 bay leaf
 1 large onion                      1 piece of fresh ginger root  (1-2 inches long)


Cook until meat is tender.  Remove meat from broth.  Cool
 Nxt day skim off fat then strain broth.  Add chicken bouillon cubes if needs
more flavor.  Add chicken taken off bones.  Then add vegetables.  Carrots,
potato, (what ever you like)  When vegetzables are cooked add dumplings


  Danish Dumplings


 1 c. flour                                   1/4 t. salt
1/2 c. milk                                  1/8-1/4 t. nutmeg
1/2 c. water                                 5 eggs
1/2 c. butter or marg.                   1 slice bread (crust removed)


Bring water, milk, salt, butter, bread and nutmeg to a boil.  Add flour all at once, stir and cook to a mass or until it slips away from the side of the pan.  Cool slightly,   Beat in 1 egg at a time. Till all 5 eggs are beaten in.     Dip teaspoon in the hot broth, then get some of the dumpling batter on the spoon and  shape with a teaspoon in a sort of a large almond shape. ( Having the spoon hot helps it to slide off in the broth) Put back in the broth and let the batter go into the broth.  Proceed till al of the batter is in the broth   Cover with lid.  Will be done when all of the dumpling rise to the top of the pan.  Can thicken the broth with some flour if you like it thicker.

Rain Rain Go Away Come Again Another Day

It is rainy this wonderful day.  It is suppose to rain for 4 more days.  I hope they are wrong.  Rod and i where reading int he New Testament about the shepherd going after the lost sheep.  It makes me feel like it does not matter if we stray.  As long as we repent and come back.  Michael Mclean has a song that helps put that into perspective.  I love it .  Here is a link to the site at the end of the article you can listen to the song.

Barbacued Turkey Breast

Raw Turkey Breast ( Fish is great marinated in this also)


1  c. Soy sauce
1 c. oil
1/2 - 1 t. Horseradish
1/2 - 1 t. Garlic powder or 1 T. Fresh garlic
2 c. sprite


Mix together and pour on the Turkey Breast or Fish  Marinate for a least 2 hours.  I like to marinate overnight.  Fish i would marinate 2-4 at the most.    Barbecue or grill turkey till done.

Peanut Butter Bars

Peanut Butter Bars

      1 1/2 c. butter                    
      1 1/2 c. brown sugar
1      1/2 c. sugar                   
  3 eggs
1     1/2 c. peanut butter         
 1/2 tsp. salt
      1/2 tsp. baking soda           
      2  1/2 tsp. vanilla
3        1/4 c. flour                     
3 1/4 c. oatmeal  ( Becky used 3 1/4 c. more flour instead of  oatmeal.)
 Cream butter an sugars and peanut butter.  Add eggs and vanilla.  Add dry ingredients
and mix well.  Bake in oblong pan, greased.  Bake at 325 10-12 min.  Don't overcook.

Spread choc chips on top while hot  for icing.  Spread evenly on top.

Becky undercooked them.
This makes a lot so you may want to cut recipe in half for a 9x13 pan.

Beautiful Day

It has been raining for 3 days as i came home from the gym the sun came out.  How fast we forget how thankful I am for the Sun.  It is going to rain for another 5 days so I am going to enjoy the sun today.  Another great recipe for the day and a saying that i liked.

Cold Slaw

  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 1/4 cup Dijon mustard
  • 1/4 cup packed light brown sugar
  • 3 tablespoons apple cider vinegar
  • 2 teaspoons celery seeds
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne  (I put in1 t.)  
  • 3 cups shredded green cabbage (about 1/2 head cabbage)
  • 3 cups shredded red cabbage (about 1/2 head cabbage)
  • 1 green bell pepper, finely diced
  • 1 large carrot, peeled and shredded
  • 1/2 cup grated yellow onion
  • 1/4 cup minced fresh parsley
In a bowl, combine the mayonnaise,yogurt, mustard, sugar, vinegar, celery seeds, salt, pepper, and cayenne, and whisk well to dissolve the sugar.
In a large bowl, combine the remaining ingredients. Toss with the dressing until evenly coated. Adjust seasoning, to taste. Place in the refrigerator, covered, to chill slightly before serving.
Yield: 8 servings

What a beautiful rainy day.  I am so glad that we are getting moisture.  I have decided to post recipes that everyone just loves.  I have so many that just love this recipe.  It has been my dinner many nights.  I just wish food was not so much fun to make and eat. 

Broccoli Salad

Ingredients
  • 1 pound bacon
  • 4 cups broccoli florets
  • 1/2 c. onions, chopped
  • 1/4 cup pine nuts or walnuts
  • 1/4 cup dried cranberries
  • 1/2 cup white sugar
  • 6 tablespoons red wine vinegar
  • 1/2 c. Mayo
  • 1/2 c. plain Yogurt

Directions

  1. Place bacon in a large skillet. Cook over medium-high heat until evenly browned. Cool, crumble, and set aside.
  2. In a large bowl, toss together broccoli,  onions, nut of choice, cranberries, and bacon.
  3. In a small bowl, mix together mayonnaise,  yogurt, sugar, and red wine vinegar. Toss with vegetables to coat. Cover, and chill until serving.
